Shaved Brussel Sprouts Slaw with Apple

Ingredients
Slaw
- 1 pound Brussel sprouts thinly shaved
- 1 large apple cored and thinly sliced or diced
- 0.5 cup dried cranberries
- 0.25 cup slivered almonds or chopped walnuts
Dressing
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shaved Brussel sprouts, apple, dried cranberries, and almonds (or walnuts).
- In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey (or maple syrup), salt, and pepper.
- Pour the dressing over the slaw and toss to coat evenly. Serve immediately or chill for later.
Notes
For a vegan option, use maple syrup instead of honey.
