Ingredients
  

Slaw

  • 1 pound Brussel sprouts thinly shaved
  • 1 large apple cored and thinly sliced or diced
  • 0.5 cup dried cranberries
  • 0.25 cup slivered almonds or chopped walnuts

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine the shaved Brussel sprouts, apple, dried cranberries, and almonds (or walnuts).
  • In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey (or maple syrup), salt, and pepper.
  • Pour the dressing over the slaw and toss to coat evenly. Serve immediately or chill for later.

Notes

For a vegan option, use maple syrup instead of honey.
