Savory Lentil Crepes
These savory lentil crepes are a healthy and delicious alternative to traditional pancakes. Packed with protein and fiber, they are perfect for a nutritious breakfast, lunch, or dinner.

- 1 Blender or food processor
- 1 Non-stick skillet 8-inch diameter
- 1 Spatula for flipping crepes
Ingredients
Crepe Batter
- 1 cup red lentils rinsed
- 1.5 cups water
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.25 tsp black pepper
Optional Fillings
- Spinach fresh or frozen
- Mushrooms sliced
- Onions diced
- Tomatoes diced
- Avocado sliced
- Salsa your favorite kind
Instructions
- Combine the rinsed red lentils, water, olive oil, salt, and pepper in a blender. Blend until smooth.
- Let the batter rest for at least 15 minutes. This will allow the lentils to soften and the batter to thicken slightly.
- Heat a lightly oiled non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet and spread into a thin circle.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip carefully with a spatula.
- Fill the crepes with your favorite savory fillings, such as sautéed spinach, mushrooms, onions, tomatoes, avocado, or salsa.
- Serve the lentil crepes immediately.
Notes
For a thinner crepe, add a little more water to the batter. You can also add herbs and spices to the batter for extra flavor.
