Equipment

  • 1 Blender or food processor
  • 1 Non-stick skillet 8-inch diameter
  • 1 Spatula for flipping crepes

Ingredients
  

Crepe Batter

  • 1 cup red lentils rinsed
  • 1.5 cups water
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Optional Fillings

  • Spinach fresh or frozen
  • Mushrooms sliced
  • Onions diced
  • Tomatoes diced
  • Avocado sliced
  • Salsa your favorite kind

Instructions
 

  • Combine the rinsed red lentils, water, olive oil, salt, and pepper in a blender. Blend until smooth.
  • Let the batter rest for at least 15 minutes. This will allow the lentils to soften and the batter to thicken slightly.
  • Heat a lightly oiled non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet and spread into a thin circle.
  • Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip carefully with a spatula.
  • Fill the crepes with your favorite savory fillings, such as sautéed spinach, mushrooms, onions, tomatoes, avocado, or salsa.
  • Serve the lentil crepes immediately.

Notes

For a thinner crepe, add a little more water to the batter. You can also add herbs and spices to the batter for extra flavor.
