Ingredients
  

Dry Ingredients

  • 1.5 cup almond flour finely ground
  • 0.5 cup rolled oats gluten free
  • 0.25 cup coconut sugar
  • 1 tsp baking powder
  • 0.25 tsp sea salt

Wet Ingredients

  • 2 eggs lightly beaten
  • 0.25 cup unsweetened applesauce
  • 0.25 cup orange juice freshly squeezed
  • 2 tbsp almond milk unsweetened
  • 1 tbsp orange zest fresh
  • 1 tsp vanilla extract pure

Toppings

  • 0.25 cup sliced almonds

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper.
  • In a large mixing bowl, whisk together the almond flour, rolled oats, coconut sugar, baking powder, and sea salt.

  • In a separate bowl, whisk together the eggs, applesauce, orange juice, almond milk, orange zest, and vanilla extract.

  • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Sprinkle the sliced almonds evenly over the top.
    1 tsp vanilla extract
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the slice cool completely in the pan before lifting it out and slicing into 8 pieces.

Notes

Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
