Chickpea and Date Energy Balls

Ingredients
Base
- 15 ounce chickpeas drained and rinsed
- 1 cup pitted dates Medjool dates recommended
Flavor & Texture
- 0.5 cup rolled oats Gluten-free if needed
- 0.25 cup nut butter peanut, almond, or sunflower
- 2 tablespoons chia seeds or flaxseed meal
- 1 teaspoon vanilla extract
- 0.25 teaspoon salt

Instructions
- In a food processor, combine the drained and rinsed chickpeas, pitted dates, rolled oats, nut butter, chia seeds or flaxseed meal, vanilla extract, and salt.
- Process until the mixture is well combined and forms a sticky dough. You may need to scrape down the sides of the food processor occasionally.
- Roll the dough into 1-inch balls using your hands.
- If desired, roll the balls in shredded coconut, cocoa powder, or chopped nuts.
- Place the energy balls on a baking sheet lined with parchment paper and chill in the refrigerator for at least 30 minutes to firm up. This step is optional but recommended.
