These chickpea and date energy balls are a healthy and delicious snack, perfect for a quick energy boost. They are packed with fiber, protein, and natural sweetness.
In a food processor, combine the drained and rinsed chickpeas, pitted dates, rolled oats, nut butter, chia seeds or flaxseed meal, vanilla extract, and salt.
Process until the mixture is well combined and forms a sticky dough. You may need to scrape down the sides of the food processor occasionally.
Roll the dough into 1-inch balls using your hands.
If desired, roll the balls in shredded coconut, cocoa powder, or chopped nuts.
Place the energy balls on a baking sheet lined with parchment paper and chill in the refrigerator for at least 30 minutes to firm up. This step is optional but recommended.
