Chickpea and Date Energy Balls
These chickpea and date energy balls are a healthy and delicious snack, perfect for a quick energy boost. They are packed with fiber, protein, and natural sweetness.

- 1 cup Cooked Chickpeas canned or freshly cooked
- 1 cup Medjool Dates
- 0.5 cup Rolled Oats gluten-free if needed
- 0.25 cup Almond Butter or any nut butter
- 2 tablespoons Unsweetened Cocoa Powder
- 1 teaspoon Vanilla Extract
- 0.25 teaspoon Sea Salt
- Optional Toppings shredded coconut, chopped nuts, cocoa powder
Instructions
- Drain and rinse the chickpeas. Pit the dates.
- In a food processor, combine the chickpeas, dates, rolled oats, almond butter, cocoa powder, vanilla extract, and sea salt.
- Process until the mixture is well combined and forms a sticky dough.
- Roll the dough into 1-inch balls.
- If desired, roll the balls in shredded coconut, chopped nuts, or cocoa powder.
- Place the energy balls in the refrigerator for at least 30 minutes to firm up.
- Serve chilled and enjoy!
Notes
Store the energy balls in an airtight container in the refrigerator for up to a week. You can also freeze them for longer storage.
