  • 1 cup Cooked Chickpeas canned or freshly cooked
  • 1 cup Medjool Dates
  • 0.5 cup Rolled Oats gluten-free if needed
  • 0.25 cup Almond Butter or any nut butter
  • 2 tablespoons Unsweetened Cocoa Powder
  • 1 teaspoon Vanilla Extract
  • 0.25 teaspoon Sea Salt
  • Optional Toppings shredded coconut, chopped nuts, cocoa powder

Instructions
 

  • Drain and rinse the chickpeas. Pit the dates.
  • In a food processor, combine the chickpeas, dates, rolled oats, almond butter, cocoa powder, vanilla extract, and sea salt.
  • Process until the mixture is well combined and forms a sticky dough.
  • Roll the dough into 1-inch balls.
  • If desired, roll the balls in shredded coconut, chopped nuts, or cocoa powder.
  • Place the energy balls in the refrigerator for at least 30 minutes to firm up.
  • Serve chilled and enjoy!

Notes

Store the energy balls in an airtight container in the refrigerator for up to a week. You can also freeze them for longer storage.
