Roasted Cauliflower Steak with Lemon-Herb Dressing
A healthy and delicious way to enjoy cauliflower. This recipe features thick-cut cauliflower steaks roasted to perfection and topped with a zesty lemon-herb dressing.

Ingredients
Cauliflower Steaks
- 1 large cauliflower cut into 2 thick steaks
- 2 tablespoons olive oil
- 0.5 teaspoon garlic powder
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
Lemon-Herb Dressing
- 2 tablespoons olive oil
- 2 tablespoons lemon juice freshly squeezed
- 1 tablespoon fresh parsley chopped
- 1 tablespoon fresh chives chopped
- 1 clove garlic minced
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. In a large bowl, drizzle cauliflower steaks with olive oil and sprinkle with garlic powder, salt, and pepper. Toss to coat evenly.
- Place cauliflower steaks on the prepared baking sheet and roast for 25-30 minutes, flipping halfway through, until tender and golden brown.
- While the cauliflower is roasting, whisk together olive oil, lemon juice, parsley, chives, garlic, salt, and pepper in a small bowl.
- Once the cauliflower steaks are roasted, remove from oven and drizzle with lemon-herb dressing. Serve immediately.
Notes
Optional: Garnish with a sprinkle of red pepper flakes for a little heat.
