Ingredients
  

Cauliflower Steaks

  • 1 large cauliflower cut into 2 thick steaks
  • 2 tablespoons olive oil
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Lemon-Herb Dressing

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh chives chopped
  • 1 clove garlic minced
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. In a large bowl, drizzle cauliflower steaks with olive oil and sprinkle with garlic powder, salt, and pepper. Toss to coat evenly.
  • Place cauliflower steaks on the prepared baking sheet and roast for 25-30 minutes, flipping halfway through, until tender and golden brown.
  • While the cauliflower is roasting, whisk together olive oil, lemon juice, parsley, chives, garlic, salt, and pepper in a small bowl.
  • Once the cauliflower steaks are roasted, remove from oven and drizzle with lemon-herb dressing. Serve immediately.

Notes

Optional: Garnish with a sprinkle of red pepper flakes for a little heat.
