Pineapple and Cucumber Salad
A refreshing and healthy salad with the sweetness of pineapple and the coolness of cucumber.
Ingredients
Salad Ingredients
- 2 cup fresh pineapple diced
- 2 cup cucumber diced
- 0.5 cup red onion finely chopped
- 0.25 cup fresh cilantro chopped
Dressing
- 2 tablespoon lime juice freshly squeezed
- 1 tablespoon olive oil extra virgin
- 1 teaspoon honey optional
- 0.25 teaspoon salt or to taste
- 0.125 teaspoon black pepper or to taste
Instructions

- Pour the dressing over the salad and toss gently to combine. Serve immediately or chill for later.
Notes
For a spicier salad, add a pinch of cayenne pepper to the dressing. This salad is best served fresh.
