Instructions
In a large bowl, combine the diced pineapple, diced cucumber, red onion, and cilantro.

In a small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper.

Pour the dressing over the salad and toss gently to combine. Serve immediately or chill for later.
Notes
For a spicier salad, add a pinch of cayenne pepper to the dressing. This salad is best served fresh.
