Ingredients
  

Salad Ingredients

  • 2 cup fresh pineapple diced
  • 2 cup cucumber diced
  • 0.5 cup red onion finely chopped
  • 0.25 cup fresh cilantro chopped

Dressing

  • 2 tablespoon lime juice freshly squeezed
  • 1 tablespoon olive oil extra virgin
  • 1 teaspoon honey optional
  • 0.25 teaspoon salt or to taste
  • 0.125 teaspoon black pepper or to taste

Instructions
 

  • In a large bowl, combine the diced pineapple, diced cucumber, red onion, and cilantro.

  • In a small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper.
    0.25 cup fresh cilantro, 2 tablespoon lime juice, 1 tablespoon olive oil, 1 teaspoon honey
  • Pour the dressing over the salad and toss gently to combine. Serve immediately or chill for later.

Notes

For a spicier salad, add a pinch of cayenne pepper to the dressing. This salad is best served fresh.
