Greek Yogurt Zucchini Bread
Moist, wholesome zucchini bread made with protein-rich Greek yogurt and naturally sweetened. A perfect snack, breakfast, or healthy treat for the whole family.
Ingredients
- - 1 1/2 cups grated zucchini moisture squeezed out
- - 1 cup whole wheat flour or all-purpose
- - 1/2 cup rolled oats
- - 1 tsp baking soda
- - 1/2 tsp baking powder
- - 1/2 tsp cinnamon
- - 1/4 tsp salt
- - 2 large eggs
- - 1/3 cup honey or maple syrup
- - 1/2 cup plain Greek yogurt
- - 1/4 cup olive oil or melted coconut oil
- - 1 tsp vanilla extract
- - Optional: 1/4 cup chopped walnuts or dark chocolate chips
Instructions
- Preheat Oven
- Preheat oven to 175°C (350°F). Grease a loaf pan or line it with parchment paper.
- Prepare Zucchini
- Grate zucchini and squeeze out excess moisture using a clean towel or paper towels. Set aside.
- Mix Dry Ingredients
- In a medium bowl, combine flour, oats, baking soda, baking powder, cinnamon, and salt.
- Mix Wet Ingredients
- In a large bowl, whisk together eggs, honey or syrup, Greek yogurt, oil, and vanilla extract.
- Combine and Fold
- Add dry ingredients to wet, mix until just combined. Fold in zucchini and optional add-ins (nuts/chocolate).
- Bake
- Pour batter into the prepared loaf pan and smooth the top. Bake for 45–50 minutes, or until a toothpick comes out clean.
- Cool and Serve
- Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
