Healthy Lemon and Cottage Cheese Mousse

Ingredients
  

  • - 1 cup cottage cheese preferably full-fat for creaminess
  • - 1/4 cup plain Greek yogurt
  • - 2 tbsp honey or maple syrup to taste
  • - Zest of 1 lemon
  • - 2 tbsp fresh lemon juice
  • - 1/2 tsp vanilla extract
  • - Pinch of salt
  • - Optional: 1/2 tsp turmeric for color
  • - Optional toppings: fresh berries crushed nuts, or coconut flakes

Instructions
 

  • Blend the Base
  • Add cottage cheese, Greek yogurt, honey/maple syrup, lemon zest, lemon juice, vanilla extract, and salt to a blender or food processor.
  • Process Until Smooth
  • Blend on high speed for 1–2 minutes until very smooth and creamy. Scrape down sides as needed.
  • Chill
  • Spoon the mousse into small glasses or bowls. Chill for at least 1 hour to set and allow flavors to develop.
  • Serve
  • Garnish with fresh berries, a sprinkle of lemon zest, or a drizzle of honey before serving.
