Fluffy Cottage Cheese Biscuit Dough Recipe

Ingredients
- 1 cup cottage cheese full-fat or low-fat
- 1 1/2 cups all-purpose flour or whole wheat flour for healthier biscuits
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons cold butter diced
- 1 –2 tablespoons milk only if dough needs loosening
- Optional add-ins: fresh herbs like chives, parsley or shredded cheese
Instructions
- Prepare Dry Ingredients
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- Cut in the Butter
- Add the cold butter pieces and use a pastry cutter or your fingertips to blend into the flour until crumbly.
- Add Cottage Cheese
- Gently fold in the cottage cheese. The dough should be moist but manageable.
- (If it's too dry, add 1–2 tablespoons of milk.)
- Form the Biscuits
- Turn the dough onto a lightly floured surface.
- Pat it into a 3/4-inch thick layer and use a biscuit cutter to shape the biscuits.
- Bake
- Place the biscuits on a parchment-lined baking sheet.
- Bake at 425°F (220°C) for 12–15 minutes, until the tops are golden brown.
- Cool and Serve
- Let the cottage cheese biscuits cool slightly.
- Serve warm with butter, jam, or as a savory breakfast sandwich!
