Tropical Mango Passionfruit Chia Tart (No-Bake!)
A healthy, refreshing, no-bake tart made with a coconut-almond crust, creamy chia seed filling, and vibrant mango-passionfruit topping. Perfect for a light summer dessert!
Ingredients
- - **For the Crust:**
- - 1 cup almond flour or crushed graham crackers
- - 1/4 cup shredded coconut
- - 2 tablespoons maple syrup or honey
- - 3 tablespoons melted coconut oil
- - 1/2 teaspoon vanilla extract
- - Pinch of sea salt
- - **For the Chia Seed Filling:**
- - 1 cup coconut milk full-fat
- - 1/2 cup almond milk or any milk of choice
- - 1/4 cup chia seeds
- - 2 tablespoons maple syrup or honey
- - 1 teaspoon vanilla extract
- - **For the Mango-Passionfruit Layer:**
- - 1 1/2 cups fresh mango diced
- - 2 passionfruits pulp and seeds
- - 1 tablespoon lime juice
- - 2 tablespoons honey or maple syrup
- - 1 teaspoon gelatin or agar-agar optional, for a firmer topping
- - **For Garnish:**
- - Fresh mango cubes
- - Chia seeds
- - Toasted coconut flakes
- - Fresh mint leaves
Instructions
- **Prepare the Crust**
- In a bowl, mix almond flour, shredded coconut, maple syrup, melted coconut oil, vanilla, and sea salt.
- Press the mixture firmly into a 6-inch springform pan or mini tart molds. Refrigerate while preparing the filling.
- **Make the Chia Seed Filling**
- Whisk together coconut milk, almond milk, chia seeds, maple syrup, and vanilla. Let sit for 10 minutes, then stir again to avoid clumping.
- Cover and refrigerate for at least 1 hour (or overnight) until thickened.
- Once set, pour over the crust and smooth the top. Refrigerate.
- **Prepare the Mango-Passionfruit Layer**
- Blend mango, passionfruit pulp, lime juice, and honey until smooth.
- (Optional) Dissolve gelatin in 2 tbsp warm water and mix into the mango puree.
- Gently pour over the chia layer and spread evenly. Refrigerate for 1–2 hours until firm.
- **Garnish & Serve**
- Top with mango cubes, chia seeds, toasted coconut flakes, and mint leaves. Slice and enjoy!
