Ingredients
  

Burger Patties

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked quinoa
  • 1 cup cooked black beans, rinsed and drained
  • 1 cup chopped vegetables e.g., carrots, zucchini, bell peppers
  • 0.5 cup rolled oats
  • 0.25 cup chopped fresh cilantro
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Serving

  • Burger buns
  • Lettuce
  • Tomato slices
  • Avocado slices
  • Your favorite toppings

Instructions
 

  • Heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the chopped vegetables and cook for another 5 minutes, until slightly tender.
  • In a large bowl, combine the cooked quinoa, black beans, sautéed vegetables, rolled oats, cilantro, chili powder, cumin, salt, and pepper. Mix well.
  • Shape the mixture into 4 patties. If the mixture is too wet, add more rolled oats.
  • Cook the patties in a skillet over medium heat for about 5-7 minutes per side, or until heated through and slightly browned. Alternatively, grill the patties for about 4-5 minutes per side.
  • Serve the veggie burgers on burger buns with lettuce, tomato, avocado, and your favorite toppings.

Notes

For a gluten-free option, use gluten-free rolled oats. You can also add other spices to your liking.
