Peanut Butter Protein Chocolate Bark
This protein-packed chocolate bark features layers of rich dark chocolate, chewy Medjool dates, a creamy peanut protein layer, and bursts of fresh raspberries and pistachios. Perfect for a healthy, high-protein snack or treat!
- **Chocolate Layer:**
- - 120g dark chocolate
- - 1 tbsp coconut oil melted
- **Peanut Protein Layer:**
- - 1/2 cup peanut butter
- - 1/3 cup vanilla protein powder
- - 1/4 cup rice malt syrup
- - 1/4 cup water
- - 1 tsp vanilla extract
- **Other Ingredients:**
- - 12–15 Medjool dates halved and pitted
- - 1 punnet raspberries
- - 2 tbsp pistachios shelled
**Melt Chocolate**
Place the chocolate and coconut oil into a microwave-safe dish and melt in the microwave in 20-second increments, stirring between each, until fully melted. Alternatively, melt chocolate in a double boiler.
**Prepare Base Layer**
Line a loaf tin with baking paper. Pour half of the melted chocolate into the base and spread evenly. Top with the halved dates until the chocolate layer is covered.
**Make Peanut Protein Layer**
In a small bowl, combine peanut butter, protein powder, rice malt syrup, water, and vanilla extract. Mix until thick and well combined, similar to a protein ball dough. Press the peanut protein layer evenly over the dates.
**Add Fruits and Nuts**
Press raspberries and pistachios into the peanut protein layer.
**Top and Set**
Pour the remaining melted chocolate over the top. Place the tin in the freezer for 1 hour or until the chocolate is fully set.
**Slice and Serve**
Once set, lift the bark out by the baking paper and crack or slice into bite-sized pieces.
