Ingredients
  

Base

  • 1 cup rolled oats Use gluten-free if needed
  • 0.5 cup peanut butter Natural, no sugar added
  • 0.25 cup honey Or maple syrup for vegan option

Flavor & Boost

  • 0.25 cup chocolate chips Dark chocolate or semi-sweet
  • 2 tablespoons chia seeds For added fiber and omega-3s
  • 1 teaspoon vanilla extract Pure vanilla extract

Instructions
 

  • In a large mixing bowl, combine all ingredients: rolled oats, peanut butter, honey (or maple syrup), chocolate chips, chia seeds, and vanilla extract.
  • Mix all ingredients thoroughly until well combined. If the mixture is too dry, add a tablespoon of water or milk (dairy or non-dairy) at a time until the desired consistency is reached.
  • Roll the mixture into 1-inch balls using your hands.
  • Place the energy balls on a plate or tray and refrigerate for at least 30 minutes to allow them to firm up.
  • Serve chilled and enjoy!
