Ingredients
  

Parsnips

  • 1.5 lbs parsnips peeled and cut into 1/2-inch thick slices

Orange Glaze

  • 0.25 cup orange juice fresh
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 teaspoon orange zest
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions
 

  • Peel the parsnips and cut them into 1/2-inch thick slices.
  • In a small bowl, whisk together the orange juice, olive oil, maple syrup, orange zest, salt, and pepper.
  • Heat a large skillet over medium heat. Add the parsnips and cook for 5 minutes, stirring occasionally.
  • Pour the orange glaze over the parsnips and cook for 20 minutes, or until the parsnips are tender and the glaze has thickened, stirring occasionally to ensure even coating.
  • Serve the glazed parsnips hot as a side dish.

Notes

For a richer flavor, you can add a tablespoon of butter to the glaze. Garnish with fresh parsley for a pop of color.
