High-Protein Pistachio Ice Cream

- - 1/2 cup pistachios shelled and unsalted
- - 1/2 cup unsweetened almond milk or milk of choice
- - 2 tablespoons honey or maple syrup or sugar-free alternative
- - 1/2 teaspoon almond extract optional
- - 1 pinch salt
- Blend pistachios and almond milk until smooth and creamy.
- Add Greek yogurt, protein powder, honey, almond extract, and salt to the blender. Blend until fully combined and smooth.
- Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions (typically 20–25 minutes).
- If you don't have an ice cream maker, pour the mixture into a shallow container and freeze, stirring every 30-60 minutes until it reaches a scoopable consistency (about 3–4 hours).
- Let the ice cream sit at room temperature for 5–10 minutes before serving for the best texture.
- For a vegan version, use coconut yogurt and a plant-based protein powder.
- You can toast the pistachios lightly beforehand to enhance flavor.
- Adjust sweetness to taste with more or less honey or use stevia/erythritol for lower sugar.
