In a large mixing bowl, dissolve honey and yeast in warm water. Let stand for 5 minutes until foamy.
Add salt and gradually add the whole wheat flour, mixing until a dough forms. Turn dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
Place dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
Punch down the dough and shape into a loaf. Place in a greased 9x5 inch loaf pan.
Cover and let rise for another 30-45 minutes, or until almost doubled.
Preheat oven to 375°F (190°C). Bake for 40-45 minutes, or until golden brown and the internal temperature reaches 200°F (93°C).
Remove from pan and let cool completely on a wire rack before slicing.
Notes
For a softer crust, brush the top of the loaf with melted butter before baking.
