Instructions
Preheat oven to 325°F (160°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
In a large mixing bowl, combine mixed seeds, rolled oats, and cocoa powder. Mix well.

0.5 cup Rolled Oats,
0.25 cup Unsweetened Cocoa Powder
In the same bowl, pour in honey (or maple syrup), melted coconut oil, and vanilla extract. Stir until all ingredients are evenly coated.

If using, fold in the dark chocolate chips.
1 teaspoon Vanilla Extract
Transfer the mixture to the prepared baking pan and press firmly into an even layer. Use the back of a spoon or your hands to ensure it's compact.
Bake for 20-25 minutes, or until the edges are slightly golden and the bars feel firm to the touch.
Remove from the oven and let cool completely in the pan before lifting out using the parchment paper overhang. Cut into 12 bars.

Store in an airtight container at room temperature for up to a week.
