Instructions
In a large mixing bowl, combine the whole wheat flour, almond flour, baking powder, and salt.
In a separate bowl, whisk together the melted coconut oil, honey or maple syrup, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too sticky, add a little more whole wheat flour.
Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
Use Christmas-themed cookie cutters to cut out shapes.
Place the biscuits on the prepared baking sheet and bake for 10-12 minutes, or until the edges are lightly golden brown.
Let the biscuits cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Decorate with natural food coloring, shredded coconut, and chopped nuts, if desired.

Store in an airtight container at room temperature for up to 5 days.
