Equipment

  • 1 Food Processor
  • 1 Mixing Bowl
  • 1 Baking Sheet Optional, for chilling

Ingredients

Base

  • 1 cup Medjool dates, pitted
  • 0.5 cup raw almonds
  • 0.25 cup unsweetened cocoa powder
  • 0.25 tsp sea salt

Coating

  • 2 tbsp unsweetened cocoa powder For rolling

Instructions

  • Soak the dates in warm water for 10 minutes to soften them (if they are not already soft). Drain well.
  • In a food processor, combine the soaked dates, almonds, cocoa powder, and sea salt.
1 cup Medjool dates, pitted, 0.5 cup raw almonds, 0.25 cup unsweetened cocoa powder
  • Process until the mixture forms a sticky dough. If it's too dry, add a teaspoon of water at a time until it comes together.
  • Roll the dough into 1-inch balls.
  • Roll each ball in cocoa powder until evenly coated.
    0.25 tsp sea salt
  • Place the date balls on a baking sheet and chill in the refrigerator for at least 15 minutes to firm up. This step is optional but recommended for a firmer texture.
  • Enjoy immediately or store in an airtight container in the refrigerator for up to a week.

Notes

For a sweeter treat, add a tablespoon of maple syrup to the mixture. You can also use other nuts like walnuts or pecans. Add a pinch of cinnamon for extra flavor.
