Ingredients
  

Base

  • 1.5 cups whole wheat flour spelt flour works well too
  • 0.5 cup rolled oats Use gluten-free if needed
  • 0.25 cup unsweetened cocoa powder For a rich chocolate flavor
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup mashed ripe bananas The riper the better!
  • 0.5 cup maple syrup Or honey, agave, or your favorite liquid sweetener
  • 0.25 cup unsweetened applesauce Adds moisture
  • 0.25 cup coconut oil, melted Or other neutral oil
  • 1 tsp vanilla extract
  • 0.5 cup milk Almond milk or oat milk work well

Chocolate Topping

  • 0.5 cup dark chocolate chips For antioxidants
  • 1 tbsp coconut oil Helps with melting and shine

Instructions
 

  • Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  • In a large mixing bowl, whisk together whole wheat flour, rolled oats, cocoa powder, baking soda, and salt.

  • In a separate bowl, mash the ripe bananas well. Add maple syrup, applesauce, melted coconut oil, vanilla extract, and milk. Stir to combine.

  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  • Pour the batter into the prepared baking pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  • Let the slice cool completely in the pan before frosting.
  • In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.

  • Pour the melted chocolate over the cooled slice and spread evenly.
  • Refrigerate for at least 30 minutes to allow the chocolate to set.
  • Lift the slice out of the pan using the parchment paper overhang. Cut into squares and serve.

Notes

Store leftover slice in an airtight container in the refrigerator for up to 5 days. For a nuttier flavor, add 1/2 cup of chopped walnuts or pecans to the batter.
