Ingredients
  

Cauliflower

  • 1 head Cauliflower cut into florets

Halloumi

  • 225 g Halloumi Cheese sliced

Honey Glaze

  • 2 tablespoons Honey
  • 1 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 0.5 teaspoon Smoked Paprika
  • taste Salt and Pepper to taste

Instructions
 

  • Preheat your oven to 200°C (400°F). In a large bowl, toss the cauliflower florets with olive oil, salt, and pepper.
  • Spread the cauliflower in a single layer on a baking sheet and roast for 20 minutes.
  • While the cauliflower is roasting, whisk together the honey, olive oil, lemon juice, and smoked paprika in a small bowl.
  • Remove the cauliflower from the oven and drizzle with the honey glaze. Return to the oven and roast for another 10 minutes, or until the cauliflower is tender and slightly caramelized.
  • Add the halloumi slices to the baking sheet and roast for the final 5 minutes, or until the halloumi is golden brown.
  • Serve the honey-roasted cauliflower and halloumi immediately. Garnish with fresh herbs if desired.

Notes

Adjust honey to your liking. For a vegan option, replace halloumi with tofu.
