- 2 Zucchini grated
- 2 cloves Garlic minced
- 0.25 cup Parmesan cheese optional, or nutritional yeast
- 0.25 cup Breadcrumbs whole wheat or gluten-free
- 1 Egg lightly beaten, or flax egg
- 1 tablespoon Olive oil
- 0.5 teaspoon Dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Grease a baking sheet or line it with parchment paper. Grate the zucchinis and place them in a clean kitchen towel or cheesecloth. Squeeze out as much excess moisture as possible. This step is crucial to prevent the bites from becoming soggy.
- In a mixing bowl, combine the squeezed zucchini, minced garlic, Parmesan cheese (if using), breadcrumbs, beaten egg (or flax egg), olive oil, dried oregano, salt, and pepper.
- Mix all the ingredients thoroughly until well combined.
- Take about a tablespoon of the mixture and form it into small bite-sized shapes. Place them on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and firm to the touch. Flip the bites halfway through for even cooking.
- Remove from the oven and let the zucchini garlic bites cool slightly before serving. Enjoy them warm or at room temperature.
Notes
For a vegan version, substitute the egg with a flax egg (1 tbsp flaxseed meal mixed with 3 tbsp water, let sit for 5 minutes). You can also use nutritional yeast instead of Parmesan cheese.
