No-Bake Blueberry and Chia Seed Pie
This no-bake blueberry and chia seed pie is a refreshing, antioxidant-packed dessert that's naturally sweetened and rich in omega-3s. Perfect for a summer treat or a wholesome after-dinner indulgence!
Ingredients
- For the crust:
- 1 1/2 cups almonds or walnuts
- 1 cup Medjool dates pitted
- 1/4 teaspoon sea salt
- 1 tablespoon coconut oil
- For the filling:
- 2 cups fresh or frozen blueberries thawed if frozen
- 1/2 cup canned coconut milk full fat
- 1/4 cup maple syrup or honey
- 3 tablespoons chia seeds
- 2 teaspoons lemon juice
- 1 teaspoon vanilla extract
- For garnish optional:
- Fresh blueberries
- Extra chia seeds
- Fresh mint leaves
Instructions
- Prepare the crust: In a food processor, pulse almonds, dates, sea salt, and coconut oil until the mixture holds together when pressed. Press the crust evenly into the bottom and sides of a 9-inch pie pan. Chill in the freezer while preparing the filling.
- Make the filling: In a blender, combine the blueberries, coconut milk, maple syrup (or honey), lemon juice, and vanilla extract. Blend until smooth. Stir in chia seeds by hand.
- Assemble the pie: Pour the filling into the chilled crust. Smooth the top with a spatula.
- Chill to set: Cover and refrigerate for at least 4 hours or overnight until firm.
- Garnish and serve: Before serving, top with fresh blueberries, a sprinkle of chia seeds, and mint leaves if desired.
Notes
For a stronger blueberry flavor, reduce the coconut milk slightly.
You can make this pie completely vegan by using maple syrup instead of honey.
Store leftovers covered in the fridge for up to 5 days.
