Ingredients
  

Dry Ingredients

  • 1 cup almond flour finely ground
  • 0.5 cup unsweetened cocoa powder Dutch-processed recommended
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt

Wet Ingredients

  • 1 cup unsweetened applesauce
  • 0.75 cup granulated sugar
  • 0.5 cup vegetable oil Canola or sunflower oil
  • 2 teaspoon vanilla extract
  • 1 cup hot water

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and line the bottom of an 8-inch round cake pan with parchment paper.
  • In a large bowl, whisk together almond flour, cocoa powder, baking soda, and salt.

  • In a separate bowl, combine applesauce, sugar, oil, and vanilla extract. Mix well.

  • Pour the wet ingredients into the dry ingredients and mix until just combined. Gradually add the hot water and mix until the batter is smooth.

  • Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  • Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

For a richer flavor, use dark cocoa powder. You can also add chocolate chips to the batter.
