Equipment

  • 1 Immersion Blender Or regular blender.

Ingredients
  

Base

  • 1 tablespoon olive oil
  • 1 medium onion yellow or white
  • 2 cloves garlic

Vegetables

  • 1 large sweet potato
  • 1 medium cauliflower
  • 4 cups vegetable broth low sodium

Seasoning

  • 1 teaspoon curry powder optional
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  • Add sweet potato, cauliflower, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the sweet potato and cauliflower are tender.
  • Remove the pot from heat. Use an immersion blender to blend the soup until smooth and creamy. If using a regular blender, carefully transfer the soup in batches to the blender and blend until smooth. Return the blended soup to the pot.
  • Stir in curry powder (optional), salt, and pepper. Taste and adjust seasonings as needed. Heat through if necessary. Serve hot.

Notes

For a spicier soup, add a pinch of red pepper flakes. You can also garnish with fresh herbs like cilantro or parsley.
