Sweet Potato Cauliflower Soup
A creamy and comforting soup packed with nutrients and flavor from sweet potatoes and cauliflower.
Equipment
- 1 Large pot For simmering the soup.
- 1 Immersion Blender Or regular blender.
Ingredients
Base
- 1 tablespoon olive oil
- 1 medium onion yellow or white
- 2 cloves garlic
Vegetables
- 1 large sweet potato
- 1 medium cauliflower
- 4 cups vegetable broth low sodium
Seasoning
- 1 teaspoon curry powder optional
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
- Add sweet potato, cauliflower, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the sweet potato and cauliflower are tender.
- Remove the pot from heat. Use an immersion blender to blend the soup until smooth and creamy. If using a regular blender, carefully transfer the soup in batches to the blender and blend until smooth. Return the blended soup to the pot.
- Stir in curry powder (optional), salt, and pepper. Taste and adjust seasonings as needed. Heat through if necessary. Serve hot.
Notes
For a spicier soup, add a pinch of red pepper flakes. You can also garnish with fresh herbs like cilantro or parsley.
