Sweet Potato Burritos
Healthy and delicious sweet potato burritos packed with flavor and nutrients.

Ingredients
For the Sweet Potato Filling:
- 1 large sweet potato peeled and diced
- 1 tablespoon olive oil
- 0.5 cup onion diced
- 1 teaspoon chili powder
- 0.5 teaspoon cumin
- 0.25 teaspoon smoked paprika
- 0.25 teaspoon garlic powder
- Salt and pepper to taste
For the Burritos:
- 4 large whole wheat tortillas
- 15 ounce black beans rinsed and drained
- 1 cup cooked brown rice
- 0.5 cup salsa
- 0.25 cup chopped cilantro
- Optional toppings avocado, Greek yogurt, hot sauce
Instructions
- Preheat oven to 400°F (200°C). Toss diced sweet potato with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, or until tender.
- While sweet potato is roasting, sauté diced onion in the same skillet over medium heat until softened, about 5 minutes.
- Warm tortillas according to package directions.
- Divide the roasted sweet potato, black beans, brown rice, salsa, and cilantro evenly among the tortillas.
- Fold in the sides of the tortilla and roll up tightly.
- Serve immediately with optional toppings like avocado, Greek yogurt, or hot sauce.
Notes
These burritos can be easily customized with your favorite fillings. Feel free to add other vegetables, beans, or grains.
