Sugar-Free English Muffins

Ingredients
Dry Ingredients
- 2 cups whole wheat flour
- 1 teaspoon baking powder
- 0.5 teaspoon baking soda
- 0.25 teaspoon salt
Wet Ingredients
- 1 cup unsweetened applesauce
- 1 cup milk (dairy or non-dairy)
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
Instructions
- Preheat oven to 375°F (190°C). Grease a baking sheet or line with parchment paper. If using, grease muffin rings as well.

- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Drop spoonfuls of batter onto the prepared baking sheet, using muffin rings if desired, filling each ring about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool slightly before serving. Enjoy with your favorite toppings!
Notes
For a more authentic English muffin texture, try cooking them on a griddle first before baking.
