Ingredients
  

Dry Ingredients

  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

Wet Ingredients

  • 1 cup unsweetened applesauce
  • 1 cup milk (dairy or non-dairy)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a baking sheet or line with parchment paper. If using, grease muffin rings as well.
  • In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.

  • In a separate bowl, combine the unsweetened applesauce, milk, olive oil, and apple cider vinegar.

  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  • Drop spoonfuls of batter onto the prepared baking sheet, using muffin rings if desired, filling each ring about 3/4 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool slightly before serving. Enjoy with your favorite toppings!

Notes

For a more authentic English muffin texture, try cooking them on a griddle first before baking.
