Soba Noodles with Garlic and Sesame
A simple and flavorful soba noodle dish featuring garlic, sesame oil, and toasted sesame seeds. A quick and healthy meal!

- 1 Large pot For boiling the soba noodles
- 1 Large skillet or wok For sautéing the garlic and sesame
Ingredients
Noodles
- 8 ounces soba noodles
Sauce
- 3 tablespoons sesame oil
- 4 cloves garlic minced
- 2 tablespoons soy sauce low sodium
- 1 tablespoon rice vinegar
- 1 teaspoon brown sugar or maple syrup
- 0.5 teaspoon red pepper flakes optional
Garnish
- 2 tablespoons sesame seeds toasted
- 2 green onions thinly sliced
Instructions
- Cook the soba noodles according to package directions. Drain and rinse with cold water to stop the cooking process. Set aside.
- In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant, being careful not to burn it.
- Add the soy sauce, rice vinegar, and brown sugar (or maple syrup) to the skillet. Stir well to combine. If using, add the red pepper flakes.
- Add the cooked soba noodles to the skillet and toss to coat evenly with the sauce.
- Serve immediately, garnished with toasted sesame seeds and sliced green onions.
Notes
Optional additions: Add some protein like tofu or edamame for a more substantial meal. Feel free to add vegetables such as bell peppers, carrots, or spinach.
