Ingredients
  

Noodles

  • 8 ounces soba noodles

Sauce

  • 3 tablespoons sesame oil
  • 4 cloves garlic minced
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon rice vinegar
  • 1 teaspoon brown sugar or maple syrup
  • 0.5 teaspoon red pepper flakes optional

Garnish

  • 2 tablespoons sesame seeds toasted
  • 2 green onions thinly sliced

Instructions
 

  • Cook the soba noodles according to package directions. Drain and rinse with cold water to stop the cooking process. Set aside.
  • In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and cook for about 1 minute, or until fragrant, being careful not to burn it.
  • Add the soy sauce, rice vinegar, and brown sugar (or maple syrup) to the skillet. Stir well to combine. If using, add the red pepper flakes.
  • Add the cooked soba noodles to the skillet and toss to coat evenly with the sauce.
  • Serve immediately, garnished with toasted sesame seeds and sliced green onions.

Notes

Optional additions: Add some protein like tofu or edamame for a more substantial meal. Feel free to add vegetables such as bell peppers, carrots, or spinach.
