Ingredients
  

Cauliflower Steaks

  • 1 head cauliflower cut into 1-inch thick steaks

Lemon-Herb Dressing

  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon fresh parsley
  • 1 tablespoon fresh dill
  • 1 clove garlic
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper freshly ground

Optional Toppings

  • red pepper flakes to taste
  • Parmesan cheese optional

Instructions
 

  • Preheat oven to 400°F (200°C). Cut the cauliflower into 1-inch thick steaks. You should get 2-3 steaks from the center of the cauliflower. Save the remaining florets for another use.
  • In a large bowl, whisk together olive oil, lemon juice, parsley, dill, garlic, salt, and pepper.
  • Place the cauliflower steaks on a baking sheet lined with parchment paper. Brush both sides of the cauliflower steaks with the lemon-herb dressing.
  • Roast for 20-25 minutes, or until the cauliflower is tender and golden brown, flipping halfway through.
  • Serve immediately, drizzled with any remaining dressing. Sprinkle with red pepper flakes or Parmesan cheese, if desired.

Notes

For best results, use a large, firm head of cauliflower. If you don't have fresh herbs, you can use dried herbs, but reduce the amount by half.
