Roasted Cauliflower Steaks with Lemon-Herb Dressing
A healthy and delicious way to enjoy cauliflower. Thick-cut cauliflower steaks are roasted until tender and golden brown, then drizzled with a vibrant lemon-herb dressing.

Ingredients
Cauliflower Steaks
- 1 head cauliflower cut into 1-inch thick steaks
Lemon-Herb Dressing
- 3 tablespoons olive oil extra virgin
- 2 tablespoons lemon juice freshly squeezed
- 1 tablespoon fresh parsley
- 1 tablespoon fresh dill
- 1 clove garlic
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper freshly ground
Optional Toppings
- red pepper flakes to taste
- Parmesan cheese optional
Instructions
- Preheat oven to 400°F (200°C). Cut the cauliflower into 1-inch thick steaks. You should get 2-3 steaks from the center of the cauliflower. Save the remaining florets for another use.
- In a large bowl, whisk together olive oil, lemon juice, parsley, dill, garlic, salt, and pepper.
- Place the cauliflower steaks on a baking sheet lined with parchment paper. Brush both sides of the cauliflower steaks with the lemon-herb dressing.
- Roast for 20-25 minutes, or until the cauliflower is tender and golden brown, flipping halfway through.
- Serve immediately, drizzled with any remaining dressing. Sprinkle with red pepper flakes or Parmesan cheese, if desired.
Notes
For best results, use a large, firm head of cauliflower. If you don't have fresh herbs, you can use dried herbs, but reduce the amount by half.
