  • 4 cups fresh raspberries Organic preferred
  • 4 cups white wine vinegar Good quality

Instructions

  • In a clean, large glass jar, combine the raspberries and white wine vinegar.
  • Cover the jar with a non-reactive lid or plastic wrap secured with a rubber band. Let it sit in a cool, dark place for 2 weeks (14 days), stirring or shaking gently every day.
  • After 2 weeks, strain the vinegar through a fine-mesh strainer lined with cheesecloth. Discard the solids.
  • Pour the strained raspberry vinegar into clean bottles. Seal tightly and store in a cool, dark place. The vinegar will keep for several months.

Notes

Adjust the raspberry to vinegar ratio for a stronger or milder flavor. For a sweeter vinegar, add a small amount of sugar or honey after straining.
