Quinoa Cannellini Bean Patties
These healthy and delicious quinoa and cannellini bean patties are packed with plant-based protein and fiber. They are perfect as a main course, side dish, or snack. Serve them with your favorite sauce or salad.

Ingredients
Patties
- 1 cup cooked quinoa
- 15 ounce cannellini beans rinsed and drained
- 0.5 cup chopped onion
- 0.25 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a large bowl, combine the cooked quinoa, cannellini beans, chopped onion, fresh parsley, minced garlic, dried oregano, salt, and black pepper.
- Mash the cannellini beans with a fork or potato masher until mostly smooth. You can also use a food processor for a smoother consistency, but be careful not to over-process.
- Form the mixture into 4 patties, each about 1/2 inch thick.
- Heat the olive oil in a large frying pan over medium heat. Cook the patties for 5-7 minutes per side, or until golden brown and heated through.
- Serve the quinoa cannellini bean patties immediately with your favorite sauce or salad.
Notes
These patties can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat in a frying pan or oven before serving.
