Ingredients
  

Patties

  • 1 cup cooked quinoa
  • 15 ounce cannellini beans rinsed and drained
  • 0.5 cup chopped onion
  • 0.25 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions
 

  • In a large bowl, combine the cooked quinoa, cannellini beans, chopped onion, fresh parsley, minced garlic, dried oregano, salt, and black pepper.
  • Mash the cannellini beans with a fork or potato masher until mostly smooth. You can also use a food processor for a smoother consistency, but be careful not to over-process.
  • Form the mixture into 4 patties, each about 1/2 inch thick.
  • Heat the olive oil in a large frying pan over medium heat. Cook the patties for 5-7 minutes per side, or until golden brown and heated through.
  • Serve the quinoa cannellini bean patties immediately with your favorite sauce or salad.

Notes

These patties can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat in a frying pan or oven before serving.
