  • 1 cup rolled oats Use gluten-free if needed
  • 0.5 cup peanut butter Natural, unsweetened
  • 0.25 cup honey Or maple syrup
  • 1 teaspoon vanilla extract Pure vanilla extract

Optional Add-ins

  • 0.25 cup chocolate chips Dark chocolate
  • 0.25 cup shredded coconut Unsweetened
  • 2 tablespoons chia seeds For added nutrients

Instructions
 

  • In a medium bowl, combine the rolled oats, peanut butter, honey, and vanilla extract. Mix well until all ingredients are thoroughly combined.
  • If desired, add chocolate chips, shredded coconut, and chia seeds. Stir to distribute evenly.
  • Roll the mixture into 1-inch balls. Place the energy balls on a parchment-lined plate or baking sheet.
  • Refrigerate the energy balls for at least 30 minutes to allow them to firm up.
