Ingredients
  

Dry Ingredients

  • 2 cup rolled oats, finely ground Use a food processor or blender to grind the oats into a fine flour.

Wet Ingredients

  • 2 apples, grated Use your favorite apple variety, such as Gala or Honeycrisp.
  • 0.25 cup unsweetened applesauce
  • 2 tablespoon coconut oil, melted

Spices and Flavorings

  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the ground rolled oats, cinnamon, nutmeg, and salt.

  • Add the grated apples, applesauce, and melted coconut oil to the dry ingredients. Stir until well combined.

  • Drop spoonfuls of the mixture onto the prepared baking sheet.
  • Bake for 20-25 minutes, or until the edges are golden brown.
  • Let the biscuits cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Enjoy warm or at room temperature.

Notes

For a sweeter biscuit, add a tablespoon of honey or maple syrup to the batter. Store leftover biscuits in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
