Mediterranean Quinoa Salad
A vibrant and healthy salad packed with quinoa, fresh vegetables, and a zesty lemon dressing. Perfect as a light lunch or a side dish.

Ingredients
Salad
- 1 cup quinoa rinsed
- 2 cups water
- 0.5 cup cucumber chopped
- 0.5 cup tomatoes chopped
- 0.25 cup red onion chopped
- 0.25 cup feta cheese crumbled (optional)
- 0.25 cup Kalamata olives halved
Dressing
- 3 tablespoons olive oil
- 2 tablespoons lemon juice freshly squeezed
- 1 teaspoon dried oregano
- 0.5 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes, or until all water is absorbed. Fluff with a fork and let cool.
- While quinoa is cooking, chop cucumber, tomatoes, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
- In a large bowl, combine cooked quinoa, cucumber, tomatoes, red onion, feta cheese (optional), and Kalamata olives.
- Pour dressing over the salad and toss gently to combine. Serve immediately or chill for later.
Notes
For a vegan option, omit the feta cheese.
