Ingredients
  

Salad

  • 1 cup quinoa rinsed
  • 2 cups water
  • 0.5 cup cucumber chopped
  • 0.5 cup tomatoes chopped
  • 0.25 cup red onion chopped
  • 0.25 cup feta cheese crumbled (optional)
  • 0.25 cup Kalamata olives halved

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • 0.5 teaspoon garlic powder
  • Salt and pepper to taste

Instructions
 

  • In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes, or until all water is absorbed. Fluff with a fork and let cool.
  • While quinoa is cooking, chop cucumber, tomatoes, and red onion.
  • In a small bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  • In a large bowl, combine cooked quinoa, cucumber, tomatoes, red onion, feta cheese (optional), and Kalamata olives.
  • Pour dressing over the salad and toss gently to combine. Serve immediately or chill for later.

Notes

For a vegan option, omit the feta cheese.
