Lemon Curd Chia Seed Pudding
A healthy and delicious twist on lemon curd featuring the nutritional benefits of chia seeds.

Ingredients
Lemon Curd
- 0.25 cup lemon juice freshly squeezed
- 2 tbsp honey
- 1 tbsp coconut oil
- 1 egg large
Chia Seed Pudding
- 1 cup unsweetened almond milk
- 0.25 cup chia seeds
- 1 tsp vanilla extract
Instructions
- In a small saucepan, whisk together lemon juice, honey, coconut oil, and egg.
- Cook over low heat, stirring constantly, until the mixture thickens to coat the back of a spoon (about 5 minutes).
- Remove from heat and let cool slightly.
- In a bowl, combine almond milk, chia seeds, and vanilla extract.
- Stir well and let sit for at least 15 minutes, or preferably overnight, to allow the chia seeds to absorb the liquid and create a pudding-like consistency.
- Divide the chia seed pudding between two bowls. Top with the lemon curd.
- Serve immediately or chill for later.
Notes
For a vegan version, substitute the honey with maple syrup or agave nectar. Ensure the lemon curd cools completely before adding to the pudding to prevent it from melting the chia seed mixture.
