Immunity-Boosting Chicken and Turmeric Soup

Ingredients
Base
- 1 tbsp olive oil Extra virgin olive oil.
- 1 onion Yellow onion, finely chopped.
- 2 carrots Medium-sized carrots, peeled and chopped.
- 2 celery stalks Finely chopped.
- 4 cloves garlic Freshly minced.
Protein and Broth
- 1 lb boneless, skinless chicken breasts Cut into 1-inch pieces.
- 8 cups chicken broth Low sodium.
Spices and Immunity Boosters
- 1 tbsp ground turmeric High-quality turmeric.
- 1 tsp grated ginger Fresh ginger.
- 0.5 tsp black pepper Freshly ground.
- 0.25 tsp red pepper flakes For a little heat.
- Salt and pepper To taste
Finishing Touches
- 1 cup cooked brown rice or quinoa For added fiber and nutrients.
- 0.25 cup Fresh parsley Freshly chopped
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes. Add garlic and cook for another minute until fragrant.
- Add chicken pieces to the pot and cook until lightly browned. Stir in turmeric, ginger, black pepper, and red pepper flakes (if using). Cook for 1 minute, stirring constantly.
- Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
- Stir in cooked brown rice or quinoa. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
Notes
For an extra boost, add a squeeze of lemon juice before serving.
