Hearty Vegetable Bake
A delicious and nutritious vegetable bake packed with seasonal flavors and baked to perfection. Perfect as a side dish or a light vegetarian meal.

Ingredients
Vegetables
- 1 large broccoli florets cut into florets
- 2 medium carrots peeled and sliced
- 1 red bell pepper seeded and chopped
- 1 zucchini chopped
- 1 yellow squash chopped
- 1 red onion thinly sliced
Sauce
- 2 tbsp olive oil
- 2 cloves garlic minced
- 1 tsp dried oregano
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.25 cup vegetable broth
Instructions
- Preheat oven to 375°F (190°C). Wash and chop all vegetables into bite-sized pieces. Place them in a large mixing bowl.
- In a small bowl, whisk together olive oil, minced garlic, dried oregano, salt, black pepper, and vegetable broth.
- Pour the sauce over the vegetables in the mixing bowl and toss to coat evenly.
- Transfer the vegetable mixture to a baking dish. Bake for 45 minutes, or until vegetables are tender and slightly browned.
- Let cool slightly before serving. Enjoy!
Notes
For a richer flavor, consider adding a sprinkle of parmesan cheese during the last 10 minutes of baking. Store leftovers in an airtight container in the refrigerator for up to 3 days.
