Healthy Mushroom Meat Tacos

Ingredients
Mushroom "Meat"
- 1 pound cremini mushrooms sliced
- 1 tablespoon olive oil
- 0.5 onion diced
- 2 cloves garlic minced
- 1 teaspoon chili powder
- 0.5 teaspoon cumin
- 0.25 teaspoon smoked paprika
- Salt and pepper to taste
Taco Fixings
- 8 small corn tortillas
- 1 avocado sliced
- 0.25 cup chopped cilantro
- Lime wedges for serving
- Optional toppings salsa, shredded lettuce, diced tomatoes
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Add the sliced mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms have released their moisture and browned, about 10-15 minutes.
- Stir in the chili powder, cumin, and smoked paprika. Season with salt and pepper to taste. Cook for another 2-3 minutes, allowing the spices to toast and the flavors to meld.
- Warm the corn tortillas according to package directions. You can warm them in a dry skillet, microwave, or oven.
- Fill each tortilla with the mushroom "meat". Top with sliced avocado, chopped cilantro, and your favorite optional toppings like salsa, shredded lettuce, or diced tomatoes.
- Serve immediately with lime wedges on the side.
Notes
For a spicier taco, add a pinch of cayenne pepper to the mushroom mixture.
