Ingredients
  

Mushroom "Meat"

  • 1 pound cremini mushrooms sliced
  • 1 tablespoon olive oil
  • 0.5 onion diced
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
  • 0.25 teaspoon smoked paprika
  • Salt and pepper to taste

Taco Fixings

  • 8 small corn tortillas
  • 1 avocado sliced
  • 0.25 cup chopped cilantro
  • Lime wedges for serving
  • Optional toppings salsa, shredded lettuce, diced tomatoes

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  • Add the sliced mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms have released their moisture and browned, about 10-15 minutes.
  • Stir in the chili powder, cumin, and smoked paprika. Season with salt and pepper to taste. Cook for another 2-3 minutes, allowing the spices to toast and the flavors to meld.
  • Warm the corn tortillas according to package directions. You can warm them in a dry skillet, microwave, or oven.
  • Fill each tortilla with the mushroom "meat". Top with sliced avocado, chopped cilantro, and your favorite optional toppings like salsa, shredded lettuce, or diced tomatoes.
  • Serve immediately with lime wedges on the side.

Notes

For a spicier taco, add a pinch of cayenne pepper to the mushroom mixture.
Use whole wheat tortillas for added fiber.
