Healthy Lemon Cottage Cheese Mousse
A light, creamy, and high-protein no-bake dessert made with cottage cheese, Greek yogurt, lemon juice, and natural sweeteners. Perfect for a refreshing, healthy treat!
Ingredients
- - 1 cup cottage cheese full-fat or low-fat
- - 1/4 cup Greek yogurt
- - 3 tablespoons fresh lemon juice about 1 large lemon
- - 1 tablespoon lemon zest
- - 2–3 tablespoons honey or maple syrup to taste
- - 1/2 teaspoon pure vanilla extract
- - Optional: pinch of turmeric for bright yellow color
- - Toppings: fresh berries mint leaves, coconut flakes
Instructions
- **Blend the Base**
- Add cottage cheese, Greek yogurt, lemon juice, lemon zest, honey (or maple syrup), and vanilla extract to a blender or food processor. Blend until completely smooth and creamy.
- **Taste and Adjust**
- Taste and adjust the sweetness or acidity by adding more honey or lemon juice if needed. Optionally, add a small pinch of turmeric for color.
- **Chill**
- Spoon the mousse into serving glasses or bowls. Refrigerate for at least 1 hour to set and chill.
- **Garnish and Serve**
