Ingredients
  

Dry Ingredients

  • 1.5 cup whole wheat flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 1 tsp cinnamon

Wet Ingredients

  • 1 cup pitted dates, chopped
  • 1 cup boiling water
  • 0.5 cup unsweetened applesauce
  • 0.25 cup olive oil
  • 2 large eggs
  • 1 tsp vanilla extract

Nuts

  • 0.5 cup walnuts, chopped

Instructions
 

  • In a bowl, combine the chopped dates and boiling water. Let it sit for 10 minutes to soften the dates.
  • Add the applesauce, olive oil, eggs, and vanilla extract to the date mixture. Mix well.
  • In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Fold in the chopped walnuts.
  • Pour the batter into a greased and floured 9-inch cake pan. Bake in a preheated oven at 350°F (175°C) for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.

Notes

For a richer flavor, you can add a tablespoon of molasses to the wet ingredients.
