Healthy Date and Walnut Cake
A moist and delicious date and walnut cake made with whole wheat flour and naturally sweetened with dates.

- 1 Electric Mixer Handheld or stand mixer
Ingredients
Dry Ingredients
- 1.5 cup whole wheat flour
- 1 tsp baking soda
- 0.5 tsp baking powder
- 0.25 tsp salt
- 1 tsp cinnamon
Wet Ingredients
- 1 cup pitted dates, chopped
- 1 cup boiling water
- 0.5 cup unsweetened applesauce
- 0.25 cup olive oil
- 2 large eggs
- 1 tsp vanilla extract
Nuts
- 0.5 cup walnuts, chopped
Instructions
- In a bowl, combine the chopped dates and boiling water. Let it sit for 10 minutes to soften the dates.
- Add the applesauce, olive oil, eggs, and vanilla extract to the date mixture. Mix well.
- In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the chopped walnuts.
- Pour the batter into a greased and floured 9-inch cake pan. Bake in a preheated oven at 350°F (175°C) for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.
Notes
For a richer flavor, you can add a tablespoon of molasses to the wet ingredients.
