Ingredients
  

Fritter Batter

  • 1.5 cup fresh corn kernels cut from the cob
  • 0.5 cup whole wheat flour
  • 0.25 cup chopped red bell pepper
  • 0.25 cup chopped green onions
  • 1 large egg free-range
  • 2 tablespoons milk unsweetened almond or regular
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
  • Salt and pepper to taste

Instructions
 

  • In a medium bowl, combine the corn kernels, whole wheat flour, red bell pepper, green onions, egg, milk, chili powder, cumin, salt, and pepper. Mix until just combined. Do not overmix.
  • Heat a large skillet over medium heat. Lightly coat the skillet with cooking spray or a small amount of oil.
  • Drop spoonfuls of the corn mixture onto the hot skillet, forming small fritters.
  • Cook for 3-4 minutes per side, or until golden brown and cooked through.
  • Serve the corn fritters immediately. Garnish with your favorite toppings, such as Greek yogurt or salsa.

Notes

For a spicier fritter, add a pinch of cayenne pepper to the batter.
