Healthy Corn Fritters
These healthy corn fritters are a delicious and nutritious side dish, perfect for a light lunch or snack. Made with fresh corn, whole wheat flour, and a touch of spice, they are a great way to add vegetables to your diet.

Ingredients
Fritter Batter
- 1.5 cup fresh corn kernels cut from the cob
- 0.5 cup whole wheat flour
- 0.25 cup chopped red bell pepper
- 0.25 cup chopped green onions
- 1 large egg free-range
- 2 tablespoons milk unsweetened almond or regular
- 1 teaspoon chili powder
- 0.5 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a medium bowl, combine the corn kernels, whole wheat flour, red bell pepper, green onions, egg, milk, chili powder, cumin, salt, and pepper. Mix until just combined. Do not overmix.
- Heat a large skillet over medium heat. Lightly coat the skillet with cooking spray or a small amount of oil.
- Drop spoonfuls of the corn mixture onto the hot skillet, forming small fritters.
- Cook for 3-4 minutes per side, or until golden brown and cooked through.
- Serve the corn fritters immediately. Garnish with your favorite toppings, such as Greek yogurt or salsa.
Notes
For a spicier fritter, add a pinch of cayenne pepper to the batter.
