Healthy Broccoli Bread

Ingredients
Dry Ingredients
- 2.5 cups all-purpose flour or whole wheat flour
- 1 tsp baking powder
- 0.5 tsp baking soda
- 1 tsp salt
Wet Ingredients
- 1.5 cups finely chopped broccoli Fresh or frozen (thawed)
- 1 cup milk Dairy or non-dairy
- 0.5 cup olive oil
- 2 large eggs Lightly beaten
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan. Steam or blanch the broccoli until tender-crisp. Finely chop the broccoli.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.2.5 cups all-purpose flour, 1 tsp baking powder, 0.5 tsp baking soda
- In a separate bowl, combine the milk, olive oil, and eggs. Add the chopped broccoli.1 tsp salt, 1.5 cups finely chopped broccoli
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and bake for 40-45 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and serve.
Notes
Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
