Ingredients
  

Dry Ingredients

  • 1.75 cups rolled oats
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 tsp cinnamon

Wet Ingredients

  • 3 ripe bananas, mashed
  • 0.25 cup maple syrup
  • 0.25 cup unsweetened applesauce
  • 1 large egg
  • 1 tsp vanilla extract

Optional

  • 0.5 cup chopped walnuts or pecans

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  • In a large bowl, whisk together the rolled oats, baking powder, baking soda, salt, and cinnamon.

  • In a separate bowl, mash the bananas. Add the maple syrup, applesauce, egg, and vanilla extract. Mix well.

  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  • If using, fold in the chopped walnuts or pecans.

  • Pour the batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Slice and serve. Enjoy!

Notes

Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
